If there’s one thing we know that’ll bring a sense of joy into our lives in times of uncertainty, it’s cooking.
Whether you’re working from home, homeschooling your kids or binging on multiple TV series you’ll find some time to make these juicy sticky ribs.
These juicy melt-in-your-mouth oven-baked ribs are fall-off-the-bone delicious and we’re sure they’ll put a smile on your dial during these tough times!
CORONA STICKY RIBS
Ingredients

1 x rack of pork ribs
-
1 x carrot
- 1 x celery
-
1 x medium onion
-
3 x bay leaves
-
3 x garlic cloves crushed
-
1 teaspoon sesame oil
-
1 teaspoon five spice
-
1 tablespoon whole peppercorns
-
1 tablespoon salt
-
1 x red chilli
-
15ml olive oil
-
30g butter
Marinade
-
2 x 355ml corona
-
250ml coke
-
1 cup bbq sauce
-
½ cup tomato sauce
-
½ cup hoisin sauce
Method
-
Roughly chop carrot, celery and onion and crush the garlic.

Heat a 10-litre pot on medium heat, add butter and olive oil.

Once the butter has melted add the chopped vegetables, garlic, chilli, sesame oil, 5 spice and lightly cook without colouring.

Fill 3/4 of the pot with cold water and add rack of ribs, bay leaves, salt and pepper (cut rack of ribs in half if they don’t fit).

Bring to boil and then simmer on medium heat until meat is tender (roughly 1.5 – 2 hours).

In a mixing bowl mix together Corona (drink half of the beer first 😉), Coke, bbq sauce, tomato sauce and hoisin sauce. The marinade should be thick if you drink half the beer !!!!

Pre-heat oven to 205 degrees/190 degrees fan-forced).

Once the ribs are cooked, place the ribs into a baking dish (lined with baking paper) and coat the ribs with the thick marinade over the top and both sides – Be sure to do this while the ribs are still hot so they soak in the marinade.

Let them marinate for at least an hour (the longer the better), turning occasionally.

Once marinated pop them in the oven covered and cook for 45 mins – 1 hr 15 mins or until sticky (turning a few times during the cooking process).

Let the ribs rest for 15 minutes before serving and enjoy with a beer or a glass of red or two.
